2 tbsp. (10 mL) grated lime zest
1/4 t. (50 mL) lime juice
1/4 t. (50 mL) olive oil or vegetable oil
2 tbsp. (30 mL) fresh coriander, chopped
1/2 c. 2 mL sugar
1/2 c. (2 mL) salt
1 small jalapeno pepper, seeded and finely chopped
1 garlic clove, finely chopped
4 chicken breasts, boneless, skinless (1 1/4 lb / 625 g)
1- To prepare the marinade, mix all ingredients except the chicken in a shallow glass or plastic dish, or in a resealable plastic food bag.
2-Place each chicken breast, smooth side underneath, between sheets of plastic wrap or waxed paper. Gently tender with the flat side of a meat mallet or rolling pin until they are about ¼ inch (6 mm) thick.
Add the chicken to the salty water, turn to coat well. Cover the dish or seal the bag. Refrigerate at least 30 minutes, but not more than 24 hours.
3-Light the barbecue with charcoal or gas. Remove the chicken from the salty water, discard the marinade. Close the barbecue lid and broil the chicken over medium heat for 8 minutes and 10 minutes.
