6 Step To Make The Best Pasta Ever – Orecchiette pasta with broccoli

This is my own version of one of the most famous recipes of Puglia, the orecchiette with the top of the rape (orecchiette with rabbit broccoli). This vegetable is a little bad for cooking, but then, what? My father once told me that when he was doing something wrong in his childhood, his son was feeding him with broccoli water that said: “Blessed are you, the creature of evil!”

As the broccoli is not easy to find (although it is not impossible), I replaced it with Tenderstem broccoli. My colleagues Molfettesi would be horrified by this culinary license, but I can assure you that the result is just as good. Orecchiette pasta is perfectly combined with vegetables and has recently become more popular and more available in this country.

250g broccoli tender stems

Olive oil

3 to 4 tablespoons. In bread crumbs

1 clove of garlic, finely chopped

A pinch of chili flakes (optional)

400 g of pasta with orecchiette

Bring to a boil a large pot of water and salt. Cut the bottom of the broccoli stalk and discard the end, if it is difficult. Chop the rest of the stem. Cook the tips and chopped stems in the pan for about 8 minutes or until tender.

Meanwhile, heat 2 tablespoons of olive oil in a pan and add the bread crumbs. While stirring from time to time, cook the breadcrumbs for a few minutes until golden brown then set aside.

When the broccoli is almost ready, heat 1 tablespoon of olive oil in a large skillet. Saute the garlic until it begins to brown, stirring occasionally to avoid burning.

With a slotted spoon or spoon, transfer the broccoli to the pan with the garlic (leave the water aside). Add the chili flakes, if necessary. Cook over low heat for five minutes, stirring occasionally.

Cook pasta in broccoli water for 10 minutes or until al dente.

Drain the pasta (reserving a ladle of cooking water) and mix with broccoli. Add the bread crumbs and cook for a few more minutes over low heat, mixing the reserved water paste. Serve hot, with a drizzle of olive oil, if you want.

Every time I cook this dish for a group of adults or children who like the strongest flavors, I add 4 anchovy fillets with salt to the recipe.

If the anchovies are kept in salt, make sure they are thoroughly washed and desalinated before using them.

Prepare the recipe in the usual way, following the previous method.

While the garlic is fried, add the anchovy fillets to the pan. Flatten the fillets until a good dough is obtained, then add the chili flakes.
