Ingredients:

  • 1-2 Tbsp butter
  • ½ Gala apple, peeled, cored and cut into ½-inch pieces
  • ½ cup fresh blueberries
  • 1 Tbsp maple syrup
  • ⅔ cup uncooked rolled oats
  • ¼ cup blanched slivered almonds
  • ¼ tsp baking powder
  • ¼ tsp cinnamon
  • Pinch kosher salt
  • ⅔ cup whole milk
  • 1 egg yolk
  • 2 tsp brown sugar
  • ¼ tsp vanilla extract

Instructions:

  1. Preheat the oven to 375°F.
  2. Butter the bottom of Dutch oven and about 1 inch up the sides.
  3. Add the apple and blueberries in a thin layer. Drizzle with the maple syrup.
  4. In a medium bowl, mix together the oats, almonds, baking powder, cinnamon, and salt.
  5. In a small bowl, whisk together the milk, egg yolk, sugar, and vanilla and pour over the oat mixture. Stir just until combined and spoon over the fruit.
  6. Bake, uncovered, for 30 to 35 minutes, or until the top is golden brown and the fruit is bubbling. Let cool for 10 to 15 minutes before serving.
