Barbecue sauce is one of those things that goes great with almost anything. This recipe combines chicken with some barbecue sauce, beans and sour cream to make a perfect bbq burrito. You can even put it on the barbecue for a bit after rolling it up to give it some nice grill marks and extra smokiness.
Yields: 4 servings

Ingredients : Barbecue Chicken Burritos

4 pieces lettuce
1/2 cup frozen corn
4 10-inch whole-wheat tortillas
2 pounds roasted chicken, boneless and shredded
1/2 cup barbecue sauce
1 cup black beans
1/4 cup sour cream

Method of Preparation: Barbecue Chicken Burritos

Take a large skillet and heat it over medium high heat.
Place the chicken and incorporate the barbecue sauce, sour cream,
corn and beans.
Stir all the ingredients together to combine them.
Cook all the ingredients for about 5 to 7 minutes until they are
heated through.
Place the tortillas in a working surface and add 1 piece of lettuce
on the middle of each tortilla.
Spoon 1/4 the chicken mixture and place it over the lettuce.
Roll the tortilla into a tight cylinder.
Serve warm.
