Ingredient List : Homemade Miniature Lasagnas

1 ½ cups of flour, all-purpose
2 eggs, large
1 tablespoon of salt
Ricotta cheese, as needed
Tomato sauce, as needed
2 ½ cups of mozzarella cheese, grated
2 cups of parmesan cheese, grated
1 lb. of beef, lean, ground, and fully cooked
8 basil leaves, large

Instructions : Homemade Miniature Lasagnas

Preheat the oven to 350°F.
In a large bowl, add the all-purpose flour and eggs and beat
lightly until mixed. Knead the dough while in the bowl for 5
minutes or until elastic. Add more flour if necessary.
Divide the dough into 3 balls and cover each with a moist paper
towel.
Flatten each ball and roll through a pasta machine on the widest
setting. Fold the dough into thirds and run through the pasta
machine again. Repeat with the remaining balls of dough.
Fill a large pot with salted water, over medium heat, and bring
to a boil. Once boiling, add the lasagna noodles and cook for 30
seconds. Drain the noodles.
Add 1 to 2 spoonfuls of the tomato sauce into the bottom of 8
medium ramekins. Mix the remaining tomato sauce with the
ricotta cheese.
Add a layer of the cooked ground beef into each ramekin. Top
with ¼ cup of the mozzarella, parmesan cheese, and a leaf of
basil.
Place the ramekins on a large baking sheet, cover them loosely
with aluminium foil, and place in the oven to bake for 30
minutes Remove the foil and continue to bake for 20 minutes.
Remove and allow to cool for 5 minutes before serving.
