What’s a great burrito without hot sauce in it? These flavorful chicken and rice burritos will make a delicious dinner that everyone will love.
Yields: 6 servings

Ingredients : Hot Chicken & Rice Burritos

1/2 cup black olives, sliced
7 cups cooked chicken meat, shredded
1 16-ounce jar picante sauce, divided
2 1/2 cups chicken broth, divided
1 clove garlic, minced
1/2 cup green onion, chopped
2 tablespoons butter
3 cups cheddar cheese, shredded
12 10-inch flour tortillas
1 tablespoon chili powder
1 cup long grain rice, uncooked

Method of Preparation : Hot Chicken & Rice Burritos

Melt the butter on a skillet over medium heat.

Incorporate the garlic and onions. Sauté them until they’re soft.

Add the chicken, 1/4 cup broth, 3/4 cup picante sauce and chili
powder. Stir the ingredients together and cook until heated
through.

In a saucepan pour the remaining broth and incorporate the rice.

Bring the mixture to a boil and reduce the heat to a simmer.

Cover the pan and allow it to simmer for about 20 minutes.

Pour in the remaining picante sauce, stir and cover the pan again.

Simmer for about 7 more minutes, the rice must be tender.

Preheat the oven to 375 degrees.

Stir the chicken mixture into the rice mixture.

Incorporate 2 cups of cheese and the olives. Mix everything
thoroughly.

Take 1 cup of the filling mixture and place it over a tortilla.

Fold the sides of the tortilla over the filling and then do the same
with top and bottom ends.

Place the filled tortillas in a baking dish on a single layer.

Sprinkle the rest of the cheese on top of the burritos.

Place in the oven and bake for about 15 minutes until the burritos
are heated through.
