ingredients:

1 pound of spicy Italian sausage

2 cups kale leaves

6 cups of chicken broth

2 red potatoes, peeled and cut into cubes.

1 and a half cups

Salt, freshly ground black pepper, to taste.

1 C. Red pepper flakes

instructions:

Remove the casings from the sausage and discard them, then crumble the meat.

Discard the stems of the cabbage and cut the leaves into large pieces.

In a Dutch oven, over medium heat, cook the sausage for 5 minutes.

Add chicken broth and potatoes. Let boil and simmer for 15 minutes.

Add the kale and half. Cook covered for 10 minutes. Season with salt and pepper.

Garnish with the red pepper and serve.

Preparation time: 5 minutes.

Cooking time: 30 minutes.

ingredients:

1 cup of sweet or spicy bacon cut in cubes

2 tablespoons Extra virgin olive oil

1 ¼ cup of arborio rice

3¼ cups chicken broth

Salt to taste

¾ cup of canned crushed tomatoes

instructions:

In the Dutch oven, over medium heat, brown the bacon until golden brown. Remove from pan and set aside.

Add the oil to the pan and heat for a moment. Then add the rice and cook for one minute, stirring perpetually

Add about half of the chicken broth. Cook 5 minutes. Taste and add salt if necessary.

Add the tomatoes and also the remaining broth and continue stirring till the rice absorbs all the broth

Place the risotto in bowls, garnish with cooked bacon and serve.
