INGREDIENTS : Panna Cotta with Raspberry Coulis

4 sheets of gelatin
3 tablespoon water
300 ml cream
250 ml milk
4 tablespoon of sugar
1 vanilla pod
200 g. frozen raspberries
Juice of 1 lemon
60 ml gin

PREPARATION : Panna Cotta with Raspberry Coulis

First, soak the sheets of gelatin in cold water.
Second, put the cream, milk and 2 tbsp. of sugar and vanilla pod. Convey to a stew while mixing persistently.
Third, Press the water out of the gelatin and blend with the milk and cream blend. Blend delicately till gelatin has totally broken up. Then, Strain the blend into another dish and let it cool.
Fourth, isolate the blend just as into oiled ramekins. Put in the cooler to set for 3 hr.
Include 100g. of solidified raspberries, lemon squeeze, gin and 2 tbsp. of sugar in a pan. Blend and heat to the point of boiling.
Blend the mixture into a puree and allow it to cool.
