If you love the traditional taste of shrimp scampi, then this is the perfect lasagna recipe for you. It is packed with plenty of carbs to give you enough energy to tackle the day head on.

Ingredient List : Shrimp Scampi Lasagna
¼ cup of flour, all-purpose
9 lasagna noodles, no boil
¼ cup of butter
½ cup of celery, fresh and chopped
½ cup of carrots, fresh and chopped
2 cloves of garlic, chopped
2 cups of half-and-half
1 1/3 cup of chicken broth
½ teaspoon of salt
¼ teaspoon of black pepper
1 egg, large and beaten
½ cup of parmesan cheese, grated
15 oz. container of ricotta cheese
12 oz. pack of shrimp scampi, cooked according to the
directions on the package
1 pack of popcorn shrimp, cooked according to the directions
on the package
3 cups of mozzarella cheese, shredded
1 teaspoon of parsley, flat leaf and dried
Instructions : Shrimp Scampi Lasagna
Preheat the oven to 350°F.
In a medium saucepan, over medium heat, add the butter and,
once the butter is melted, add the garlic, carrot, and celery. Stir
to mix and cook for 5 minutes or until soft.
Add the all-purpose flour and whisk until mixed.
Slowly add the half-and-half and chicken broth. Season with a
dash of salt and black pepper.
Bring the mixture to a boil. Once boiling, allow to cook for 1
minutes. Remove from heat and set aside.
In a medium bowl, add the egg, Parmesan cheese, and ricotta
cheese. Set aside.
In a large baking dish, add ¾ cup of the sauce followed by 3
lasagna noodles on top. Spread ½ of the scampi over the
noodles along with ½ of the popcorn shrimp. Pour 1/3 of the
sauce over the top. Sprinkle one cup of the mozzarella cheese
Add another 3 lasagna noodles followed by the ricotta
cheese mixture, ¾ cup of the sauce, and another cup of the
mozzarella cheese. Top with another 3 lasagna noodles
followed by the remaining shrimp scampi and popcorn shrimp.
Top with the remaining mozzarella cheese.
Garnish with the parsley.
Place in the oven to bake for 40 to 45 minutes or until the
cheese is golden. Remove and allow to stand for 15 minutes
