Ingredients : Spicy Zucchini with Buckwheat and Chicken
4 cups of peeled and cubed zucchini
1 cup of buckwheat
10 oz chicken, cubed
1 cup of Parmesan cheese, crumbled
4 tablespoons Olive oil
4 tablespoons Cheddar cheese, grated
2 tablespoons chili powder
3 tablespoons mayonnaise
salt and pepper
How to Prepare : Spicy Zucchini with Buckwheat and Chicken
Combine the basil, mayonnaise, salt, and pepper and mix well.
Then season the chicken meat with the basil, mayonnaise, salt,
and pepper mixture and leave for overnight in the fridge.
Boil the water and cook the buckwheat for 15 minutes or follow
the cooking time suggested on the packet.
Spoon the zucchini, rice, Parmesan cheese, chicken chunks, and
chili powder into a baking dish and mix.
Pour the Olive oil and sprinkle salt and pepper on top.
Preheat the oven to 280˚-300˚ Fahrenheit and bake the zucchini
and chicken mixture for 35 minutes until golden.
5 minutes before the zucchini is ready open the oven and sprinkle
the Cheddar cheese and on top.
